Help! Does anyone know how to set up Dual Monitors for games?

Help! Does anyone know how to set up Dual Monitors for games? Ive seen plenty of people on youtube playing unreal, crysis, L4d, and other titles across multiple displays. I have two identical displays on my rig and Im having serious trouble setting it up. Does any one have any links or know how to do this?
