Posting for a friend, hope this is the right forum, kinda falls between video/display/games:
Hey I need help
Im running my 7900GT video cards w/ my brand new Apple Cinema HD 30" monitor and BF2 wont go any higher than 1280X1024 resolution. Does anyone know how to fix this? None of my games go higher than that but my windows resolution is at max 2560X1600. Appreciate any help you guys could give me. Thanx.

You need to use a shortcut mod to launch the game.

Check out that site for all of the mods for wide screen and non-normal resolutions.

Right click your battlefield 2 shortcut.
Go the properties
Go to the shortcut tab
Under target there is a long path:
Add this to the end of it:
+szx 1680 +szy 1050
Where my resolution is 1680x1050. Replace the numbers with whatever resolution you want to run.
2560X1600 won't run too well with a single 7900 GT I don't think with the eye candy turned up.

BF2 doesnt have built in support for widescreen so thats why you dont see the option, kinda sucks such a nice game doesnt have this. Those shortcut add-ins only get it working so you can play the game, but your FOV will not be correct and may look funny to you. Some people can live it, some cant.
Lets just hope that EA and Dice add widescreen in the next big patch. Doesnt look like they care or have plans to do so, but we can always hope.
